Sikaiana: Food Preparation and Cooking

These are some slides concerning food and food preparation. Traditionally food was cooked in an underground oven (umu). The slides show a modified example of this, except a large truck (WWII tank?) wheel is used instead of a hole in the ground. In 1980-87, most food was fried. There are pictures of cook houses (hale kuki). There are pictures of pig preparation. The pig’s throat is cut until it bleeds out, and then the hair is burned before it is butchered. A main reason to keep pigs is to provide grease for frying.
